What it stores and how it syncs

The Health app aggregates data from your iPhone sensors, Apple Watch, and connected apps into one private record. When Health syncing is on in Settings > [your name] > iCloud, that data is kept in sync across your devices and protected with end-to-end encryption.

Health data is private by design: it is encrypted on device and in transit, and Apple cannot read it. That privacy is also why it cannot be restored from Apple if it is lost outside of an encrypted backup.

Deleting is permanent

Because of how Health data is encrypted and synced, deleting entries removes them everywhere with no recovery option. Before clearing anything to save space, export your Health data or confirm it is captured in an encrypted iCloud or device backup, since the data itself is generally not recoverable once gone.
